Thai Coconut Beef Skewers
1.5 lb flank steak
1 T Thai red curry paste
1/3 c coconut cream
1/4 c shredded coconut
1. Slice the flank steak across the grain into 1/2 inch thick slices. Thread onto a skewer
2. Combine the curry paste, coconut cream and shredded coconut in a bowl. Stir to mix.
3. Spread the paste over the meat and marinate for 1 hour
4. Grill the skewers for two minutes on each side. Serve with a salad as a meal or alone as a delicious hors d'oeuvre.
