Tomato & Garlic Stew with Prawns
1 T olive oil
2 onions, sliced
6 cloves garlic, chopped
2 14.5 oz cans whole peeled tomatoes
1 c white wine
2 c vegetable or fish stock
1 lb shelled raw prawns
2 T chopped flat-leaf parsley
Freshly ground pepper & salt
1. Heat saucepan over medium heat. Add the oil, onions and garlic and cook for 8 minutes, or
until the onions are a golden brown color.
2. Add the tomatoes and crush them with a large fork.
3. Add the wine and stock and simmer for 10 minutes or until the mixture begins to thicken.
4. Add the prawns and cook for 5 minutes. Add the parsley, and season to taste with salt and pepper.
Serve with chunks of freshly baked crusty bread. Serves 4.
